How Does A Decanter Centrifuge Make Wine?

  • by

Basic working principle of Decanter Centrifuge

Horizontal screw centrifuge is a sedimentation equipment with horizontal screw unloading and continuous operation. Its working principle is that the drum and the screw rotate at high speed in the same direction with a certain differential speed, and the material is continuously introduced into the inner cylinder of the feeding screw from the feed pipe and then enters the drum after acceleration. Under the action of the centrifugal field, the heavier solid phase is deposited on the drum wall to form a sediment layer, which is continuously pushed to the cone end of the drum by the feeding screw and discharged from the machine through the slag discharge port: the lighter liquid phase forms an inner liquid ring, which continuously overflows the drum from the overflow port at the large end of the drum and is discharged from the machine through the liquid discharge port.

Application of Decanter Centrifuge in Winemaking

1. Wine mash separation:

During the winemaking process, a large amount of wine lees mash is produced. Decanter centrifuge can effectively separate the solid and liquid phases in wine lees mash. The solid phase is mainly wine lees, which can be reused as feed or fertilizer, etc.; the liquid phase is mainly liquid containing a certain concentration of alcohol and other ingredients, which can be further processed or recycled.

2. Improve production efficiency:

The decanter centrifuge has the advantages of continuous operation, large processing capacity, and high degree of automation. It can greatly improve the efficiency of wine lees mash separation during the winemaking process, thereby saving manpower and time costs.

3. Reduce energy consumption:

Compared with traditional pressing or filtering methods, decanter centrifuge does not require additional pressure or power during the separation process, so it consumes less energy. At the same time, due to its continuous operation, it can also reduce the start and stop times of the equipment, further reducing energy consumption.

Application advantages of high-performance Decanter Centrifuge

1. Large aspect ratio:

The aspect ratio of the high-performance horizontal screw centrifuge is greater than 4, which greatly improves the separation effect. The larger the aspect ratio, the larger the effective separation and sedimentation area of the material, which can extend the residence time of the material in the drum, improve the removal rate of solids in the discharged liquid, and reduce the liquid content in the discharged solid phase.

2. Large cone angle design:

The high-performance horizontal screw centrifuge adopts a large cone angle model (generally greater than 10°), which can adjust the liquid layer depth to be deeper. The model with the same aspect ratio has a longer material clarification section, and the separated clear liquid has a lower solid content, and can better ensure the dryness of the slag phase.

3. High speed:

The design speed of the high-performance centrifuge is 4000r/min, and the separation factor is greater than 3500, which is much greater than that of conventional centrifuges (speed is not more than 2800r/min). Increasing the working speed can quickly improve the separation efficiency and speed up the processing speed.

4. Wear-resistant materials:

Replaceable carbide wear-resistant blocks are used at the drum outlet and spiral thrust surface to increase the service life by more than 3 to 5 times; the inner wall of the drum body adopts an anti-wear strip structure to effectively prevent the inner wall of the drum from being worn.

5. Energy-saving design:

By adjusting the structure to change the flow direction of the liquid outlet, the kinetic energy of the liquid centrifugal force is used to achieve the purpose of driving the drum to rotate. At the same time, the programmable logic controller (PLC) control system and the control mode of dual motor dual frequency conversion and common DC bus are adopted to achieve a design effect of reducing energy by 10% to 20%.

Actual Cases

In winemaking, the unique combination of decanter centrifuges and enzymes can help wineries reduce energy and water consumption, reduce waste, and produce clearer wines. For example, the decanter centrifuge technology developed by some companies combines it with the technology of enzymatic decomposition of grape juice to achieve continuous clarification and separation of grape juice, which not only improves the yield and quality of grape juice, but also significantly reduces production costs and energy consumption.
